Aehobak Deopbap literally means “stir-fried zucchini served over rice.” In Korean cuisine, traditional aehobak (Korean green squash) has thinner skin, a smaller size, and a sweeter taste than Western zucchini. However, since I don’t have aehobak while living in Belgium, I use standard zucchini instead.

After that, simply stir-fry it in olive oil infused with gentle garlic and green onion aromas, add tuna fish sauce and oyster sauce for a quick, savory kick, and serve it over rice, that’s all it takes!
