In a regular fridge, it’s best within about 3 weeks. If you have a Korean kimchi fridge (kimjang naengjang-go), it can easily last 6 months or longer. Even past 3 weeks in a regular fridge, it’s usually still fine to eat as long as the cabbage isn’t too soft and the taste isn’t too sour for you. Trust your own taste buds.

Once you see small bubbles rising in the broth, fermentation is underway. It usually tastes best starting around day 3, but how “ripe” you like it is totally up to your taste, some people love it fresh and crisp, others wait longer for a deeper tang.

Not even a little. Honestly, it might be one of the best foods for kids — mild, clean, and nothing to wince at. This is the version Korean kids and grandparents both eat.
