What is Steamed Pork with Cabbage?
It’s a Korean-style dish where cabbage and pork are steamed together in a pan – similar to a Korean hot pot. It’s not an official Korean hot pot, but it’s hard to describe in English any other way. Today’s recipe was inspired by Korean singer Sung Si-kyung’s version, but I’ve modified it slightly to make it diet friendly for weight loss.

When I lost 20 kg, I ate a lot of cabbage-based dishes. One of the dishes I ate the most was steamed cabbage. Sometimes I just steamed cabbage and dipped it in ssamjang (Korean dipping sauce), and sometimes I steamed it with smoked duck, which is a great weight loss food.
But here in Belgium, where I live now, smoked duck is either hard to find or way too expensive. So I used pork shoulder instead, which is much cheaper and easier to get. It’s really delicious, healthy and super easy – so don’t miss today’s recipe!

Ingredients for Steamed Pork with Cabbage
Here’s everything you’ll need to make this healthy and flavorful Korean-style steamed pork dish.
Main Ingredients
- Meat: pork shoulder

- Vegetables: cabbage, onion, green onion, minced garlic, enoki mushrooms
- Seasonings: Korean soju, soy sauce, salt and pepper
Ingredient Substitutions
- Soju: Today I used soju to remove the pork’s gamey smell, but you can also use white wine if that’s what you have at home. Cooking wine works too.
- Pork shoulder: You can use other cuts like pork belly instead of shoulder. Just avoid cuts that are too lean, like pork loin, as they can turn out dry and tough in this dish. If you don’t eat pork, you can make a halal version using chicken or beef.
- Plum extract (maesil): Plum extract helps remove the smell from the meat and adds a unique flavor and slight tanginess, so it’s hard to substitute. If you just need a bit of sweetness, you can add a small amount of sugar instead.

Cooking Tips
Juicy Meat
To make the meat juicy, lightly sear the outside first, then steam it. This helps lock in the juices. Steaming after searing makes the meat much juicier than just steaming it from the start.

Soy Sauce
Soy sauce in this recipe is used more for aroma than seasoning. For the best flavor, pour it directly into the pan and let it slightly caramelize before mixing it with the cabbage.
Soju
For Koreans, soju is the go-to for removing the smell from pork. It works similarly to white wine in Western cooking, so feel free to substitute with white wine. With alcohol vs. without, the flavor difference is huge.

Low Heat
After stir-frying the ingredients and covering the pan to steam, make sure to keep the heat low. Otherwise, the bottom may burn.
Don’t open the lid
While steaming, do not open the lid. Keep it closed so the steam can fully cook everything inside.

What If It Starts to Burn While Steaming?
If the heat is too high or the water evaporates too quickly, the bottom of the pan can burn.
But don’t worry—just add about 50ml of water and continue steaming. That should fix it!
Dipping Sauce
Since today’s recipe is low in sodium, some people (like me!) who aren’t used to mild flavors might want a dipping sauce. This sweet and tangy soy sauce dip adds extra umami when paired with the meat and cabbage. It also tastes amazing with Korean hot pot dishes like shabu-shabu.

Too lazy to make a sauce? Just dip it in ssamjang (Korean seasoned soybean paste)—it’s delicious.
No ssamjang? Gochujang (Korean red pepper paste) works great too, especially for those who like a bit of heat!

Steamed Pork with Cabbage – Weight Loss Korean Hot Pot
Equipment
- 1 deep wok with a lid (jeongol pot)
- 1 Cutting board & knife
- 1 Spatula
- 1 Spoon
Ingredients
Steamed Pork Shoulder with Cabbage
- 300 g pork shoulder (substitutions in the blog post)
- 2 pinches salt & pepper (for seasoning the pork)
- 1/2 onion
- 1/2 stalk green onion
- 1/4 head cabbage
- 1 tbsp minced garlic
- 4 tbsp Korean soju (or white whine or matsul)
- 50 ml water (+ an extra 50 ml if it looks like it might burn)
- 2 tbsp soy sauce
- 100 g enoki mushrooms
Dipping Soy Sauce
- 4 tbsp soy sauce
- 2 tbsp vinegar
- 1 tbsp cooking wine
- 1 tbsp sugar
- 1 tbsp Korean plum syrup (substitutions in the blog post)
- 2 tbsp water
- 1 tsp sesame seeds
Instructions
- Lightly season the pork shoulder with salt and pepper.
- chop the green onion and the garlic
- Thinly slice the onion, cube the cabbage.
- In a heated pan, lightly sear the pork on both sides to lock in the juices. Remove and set aside.
- In the same pan, sauté the onion until translucent. Then add green onion, minced garlic and cabbage, stir-fry briefly.
- Pour in 1 tbsp soy sauce, stir, then add 4 tbsp of soju and 50 ml of water.
- Place the pork back on top of the cabbage and enoki mushiooms.
- Cover with a lid, and steam on low heat for 10–15 minutes.If the liquid reduces too much or starts to burn, add an extra 50 ml of water.
- Once everything is tender, sprinkle chopped green onions over the top as garnish.
Dipping Sauce
- In a small bowl, mix all ingredients for the dipping soy sauce.Adjust sugar and vinegar to your taste.
