Egg Bokki is called gyeran bokki (계란볶이) in Korean. It’s a dish where you simmer boiled eggs in a tteokbokki sauce, but without the rice cakes. Since it’s low in carbs, it’s a popular menu item for people following a keto diet. Traditionally, Egg Bokki is made by simmering it in a pot or a pan, but today I’ll show you a quick microwave recipe that takes just 3 minutes!

Does tteokbokki make you gain weight?
Topokki is famous for being a food that makes you gain weight very easily. Why? I’ll explain the reason.
- Sweet, salty, and spicy sauce: Topokki sauce is packed with gochujang and sugar, making it high in sodium and sugar, which is perfect for gaining weight.
- Blood sugar spike: tteok (rice cakes) are made from refined rice, which is high in carbohydrates and raises blood sugar levels rapidly. When combined with the sweet and spicy sauce, it is perfect for causing a blood sugar spike.

Topokki for Weight Loss
As I mentioned above, topokki can get in the way of weight loss because the rice cakes are basically pure carbs, and the sauce is high in sodium and sugar. Gochujang itself is made from glutinous rice and malt, so it’s also high in carbs, sodium, and sugar. In fact, it’s best to avoid gochujang if you’re aiming for a low-carb dish. That’s why today, we’re going to make a keto style, No tteok, No gochujang topokki.

Here’s another tteokbokki-for-weight-loss recipe you might love: this version uses rice paper instead of rice cakes, and it’s stuffed with cheese, making it a low-carb option. It tastes like tteokbokki with cheese. It’s even known as a diet-friendly recipe enjoyed by K-pop idols!

Why It’s Good for Weight Loss
When you think of topokki, the first ingredients that probably come to mind are tteok (Korean rice cakes) and gochujang. But don’t be surprised—today’s recipe doesn’t use either rice cakes or gochujang.
No Gochujang
Actually, many tteokbokki restaurants don’t use gochujang in their sauces. Because the sauce is thick and rich, people naturally assume gochujang is always involved. Surprisingly, even many Koreans don’t know this. For today’s recipe, we’ll make the sauce using gochugaru (Korean red pepper flakes) instead, skipping the high carbs, sodium, and sugar that come with gochujang. The result is a clean, fresh flavor—not the typical bland diet food taste, but the kind of sauce you’d find at a good restaurant.

No Tteok
Instead of Korean tteokbokki rice cakes, we’ll leave tteok out and make a low-carb version of topokki. We’ll add eggs to turn it into a high-protein meal that’s perfect for weight loss.
You’ll be surprised how delicious and satisfying this healthier version can be!
Egg Tteokbokki Recipe
Sauce
- Gochugaru, soy sauce, oyster sauce, curry powder, sugar
Did you know that many Korean topokki restaurants add curry powder? A little bit of curry aroma upgrades the flavor.

Boiled eggs & Cheese
It’s a cheese tteokbokki recipe. They add protein. Mozzarella cheese is better, but I didn’t have mozzarella that day, so I used sliced cheese instead.
Microwave Recipe
Combine the eggs and sauce in a bowl, then microwave.
Important! Poke several holes in the eggs to prevent them from bursting in the microwave. Don’t just poke one or two holes; poke several. If you’re worried, I recommend cutting the eggs into quarters before microwaving them.

Microwave for a total of 3 minutes, heating in one-minute intervals to prevent the eggs from bursting.
How to Eat
- Banchan: Do you know Korean marinated eggs, mayak eggs? You can eat this as a Korean side dish, banchan, just like them.
- Light Meal: When you want to eat something simple and light for lunch or dinner, you can eat this too. If you want a healthier meal, adding cabbage is a good idea. Cabbage is rich in dietary fiber and gives a natural sweetness that makes it really delicious.

Low Carb Food
When I lost over 20kg, I ate a lot of low-carb foods. Among them, I highly recommend the steamed pork with cabbage recipe. It’s full of meat and vegetables, rich in dietary fiber and protein, and the dipping sauce is light without being greasy. This low-carb meal pairs perfectly and tastes really delicious. Dieting doesn’t mean you have to eat only salad. Our bodies need healthy fats and protein too.

Ingredient Substitutes
- Oyster sauce: If you don’t have oyster sauce, you can use chicken stock instead. Or add 0.5 tbsp soy sauce plus some MSG.
- Cheese: Mozzarella cheese is a much healthier option.
- Sugar substitute: You can use alternative sweeteners like stevia to lower blood sugar. Or you can substitute with honey.

Ingredients
- 3 boiled eggs
- 1 slice cheddar cheese
- 1 pinch parsley
Tteokbokki Sacue for Weight Loss
- 1 tbsp gochugaru
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp oyster sauce
- 0.5 tbsp oyster sauce
- 0.5 tsp curry powder
- 70 ml water
Instructions
- Boil the eggs and peel them.
- Combine all the sauce ingredients in a bowl and mix well to make a tteokbokki sauce.
- Add the boiled eggs to the sauce and coat them evenly.
- Cooking tip: Use a fork to poke the front, back, and sides of the eggs to prevent them from bursting.
- Microwave for 3 minutes (for best results, heat in 1-minute intervals to reduce the chance of bursting).
- Place the cheddar cheese slice on top and microwave for an additional 30 seconds.
- Sprinkle with parsley to finish.
