Hwachae: Authentic Recipe of Korean Watermelon Punch

Subak hwachae is a Korean watermelon punch made with fresh watermelon, fruit cocktail, strawberry milk, and Sprite. Served in a hollowed-out watermelon, it’s a sweet, cooling summertime treat.

Ingredients

  • 1/2 watermelon
  • 150 g canned fruit cocktail
  • 3 tbsp fruit cocktail juice(syrup)
  • 300 ml sprite
  • 2 tbsp condensed milk
Strawberry Milk
  • 150 ml milk (If you have strawberry milk, just use 150ml. If not, mix strawberry syrup with milk like this)
  • 2 tbsp strawberry syrup or strawberry jam
  • 4 cubes ice

Equipment

  • 1 Knife & cutting board
  • 1 ladle or big spoon

Method

  1. Cut the watermelon in half, then trim a small slice off the bottom so it stands upright. (Use only half of the watermelon.)

  2. Scoop out the inside of the watermelon using a spoon or melon baller.

  3. Cut the scooped watermelon flesh into bite-sized pieces.

  4. If you have strawberry milk, use that. Otherwise, make your own by mixing milk with strawberry syrup or strawberry jam.

  5. Add the condensed milk to the strawberry milk and mix well. Then pour in the Sprite.
    If foam forms on top, skim it off. Tip: If your watermelon is small, reduce the amount of milk and soda. Maintain a ratio of 2 parts soda to 1 part milk.
  6. Fill the emptied watermelon shell with the watermelon chunks and the canned fruit cocktail. Add about 3 tablespoons of the fruit cocktail syrup.

  7. Pour in the strawberry soda milk mixture, then add the ice cubes.
