Peel the sweet potato and cut it into thin sticks, slightly thinner than regular French fries.
Soak the sweet potato sticks in cold water to remove excess starch (recommended: 30 minutes).
Drain the water and pat the sweet potato sticks dry with a kitchen towel or paper towel.
Toss the sweet potato sticks with 2 tbsp of olive oil until evenly coated.
Spread the sweet potato sticks evenly on an oven tray and sprinkle 2 pinches of salt over them.
Cook in an air fryer at 190–200°C (375–390°F) for 15–30 minutes. Flip them every 7 minutes for even cooking. Adjust the time and temperature according to your air fryer model.
Bake until crispy like chips. For extra crunch, you can bake for up to 30 minutes until slightly browned.
Once cooked, sprinkle a pinch of salt to taste for extra flavor. It makes them even more delicious!
