Ingredients

  • 2 eggs
  • 1 bowl rice
  • 1 stalk green onion
  • 4 tbsp cooking oil
  • 1 tbsp oyster sauce (substitutions on the post above)
  • 1~2 pinches salt (adjust to taste)

  • 1 frying pan or wok
  • 1 Spatula

Method

  1. Crack the eggs into a bowl and beat well.

  2. Pour the eggs over the rice and mix until the grains are evenly coated.

  4. Heat a frying pan and add the cooking oil.
  5. Add the chopped green onion and sauté until fragrant (to make green onion oil).

  6. Add the egg-coated rice to the pan and stir-fry over medium heat.

  7. Add 1 tbsp of oyster sauce and season with 1–2 pinches of salt to taste.
  8. Stir-fry until everything is well combined and the rice is golden and no longer wet.
