Tomato bingsu is a refreshing, easy bingsu recipe featuring layers of snowy Greek yogurt ice and sweet frozen tomato purée. Made quickly in a blender, it offers a lighter, vitamin-rich take on authentic Korean café desserts.

Tomato Purée
15cherry tomatoes

1tbsplemon juice
Yogurt Ice Base
100gunsweetened Greek yogurt
100gice cubes
2.5tbspsweetened condensed milk
Optional Topping
1fresh tomato stemsmint leaves or basil leaves for garnish
Freeze cherry tomatoes in advance until completely solid.
Place the frozen cherry tomatoes, sugar, and lemon juice into a blender. Blend until smooth with a sorbet-like consistency. Place the purée in the refrigerator temporarily to keep cold.
In a blender, combine the unsweetened Greek yogurt, ice cubes, and sweetened condensed milk. Blend until the texture becomes soft and fluffy like snow. Be careful not to over-blend, as it will turn into liquid; stop as soon as it reaches a snowy consistency.
In a dessert bowl or cup, alternate layers of the yogurt ice base and the tomato purée. Garnish the top with tomato stems, fresh mint leaves, or basil leaves.
(Optional) Drizzle additional sweetened condensed milk over the top right before serving for extra richness and sweetness.
