Method
Cut the strawberries into small cubes.
Add 1 tbsp of sugar to the strawberries and let them macerate.
In a mixing bowl, combine the heavy cream, sugar, and matcha, and whip until it reaches a yogurt-like consistency.
Place the macerated strawberries in a strainer and drain the excess liquid.
Add the strawberries to the matcha cream and mix well.
Tip: Line a square container with plastic wrap. (This makes it easier to remove the ice cream sandwich after freezing.)
Place the waffle cookies on the bottom, spread the strawberry cream on top, then add another layer of waffle cookies.
Freeze for at least 4 hours.
Once frozen like ice cream, remove and enjoy.
