Shine Muscat Roll Sandwich: Korean Shine Muscat Dessert

This shine muscat roll sandwich is an easy 5-minute Korean fruit roll sandwich filled with crisp Shine Muscat grapes and stabilized whipped cream cheese. Soft Japanese milk bread (Korean sikbbang) wraps tightly around sweet fruit to create an authentic Seoul cafe-style shine muscat dessert.

Ingredients

  • 3 Shine Muscat grapes washed, thoroughly dried
  • 1 slice Japanese milk bread Korean sikbbang
  • 20 g heavy whipping cream chilled, 36% fat content
  • 2.5 g granulated sugar
  • 6 g cream cheese softened at 20°C / 68°F

Method

  1. Flatten 1 slice of Japanese milk bread (Korean sikbbang) with a rolling pin and trim all four crust edges cleanly.

  2. In a small bowl, stir 6g (0.2 oz) cream cheese and 2.5g sugar until completely smooth.

  3. Add 20g (0.7 oz) cold heavy cream and whip quickly at cold temperatures until stiff peaks form.

  4. Spread the whipped cream mixture evenly across the flattened Japanese milk bread (Korean sikbbang).
  5. Place 3 Shine Muscat grapes in a straight horizontal row along the front edge of the bread.
  6. Roll the Japanese milk bread (Korean sikbbang) tightly around the grapes from bottom to top and wrap firmly in plastic wrap.
  7. Refrigerate for 30 minutes (or freeze for 10 minutes) to set the cream fats.
  8. Slice in half down the center with a warmed chef knife and serve cold.
