Scrub the sweet potato thoroughly under running water.
Place the sweet potato in a microwave-safe dish. Cover it with a lid or plastic wrap (poke a few holes for steam). Microwave for 5–7 minutes*Alternative: Bake or air fry at 200°C (390°F) for 30–40 minutes, flipping halfway through, until soft.
Once cooked, slice the sweet potato in half lengthwise. Add butter, drizzle with honey,
and top with mozzarella cheese.
Microwave again for 1 minute, until the cheese melts.* Alternative: Bake or air fry at 180°C (355°F) for 5–10 minutes.
Sprinkle dried or fresh parsley, or for a more traditional touch, dust with cinnamon powder as in the original recipe.
